I'm the first person to say "yum?" Hmph. I bet those other people think bacon flavored ice cream would be "yuck" too. I've had two different bacon flavored ice creams at Oliveto's "Whole Hog" dinners, and while one of them was "yuck" the other was "yum." (And I think I could have improved it by adding more lecithin/egg yolks to get better emulsification.)
I think it would completely depend on the quality of the ingredients. Use truly excellent applewood smoked bacon, and a nice flavorful (grade B!) maple syrup and I think it could work.
But consider a maplele infused vodka and use the bacon instead of olives. Or, even better, use a light maple instead of vermouth, and an appropriately aromatic Genever instead of gin or vodka. Sansho? Work with me here...
It was this guy (http://www.browniepointsblog.com/2008/01/20/homemade-bacon-vodka/) that got me thinking on it.I have goddessfarmer's amazing bacon so I was thinking...
I like the thought; I think where I'm dubious is how to round the edge of the alcohol such that you get the enjoyment of bacon/maple without the martini burn that's fairly irrelevant in this case. The smokiness of the bacon would be another factor; there's a point, particularly with good wood-smoked bacon that the smoke flavor is assertive enough that it's jarring with other ingredients, even things like maple it'd ordinarily go well with. Add even a little bit of bacon fat to that and yuck.
So I'm down for "yum" but I know I'd wind up with a couple of undrinkable attempts before I came up with something good.
I suspect how far you cooked the bacon would be a major factor as well as the quality of bacon.I can buy some cheap vodka,Brita it and do a few bottles of different levels of cooked bacon
I'm a martini purist. Maple and bacon go with my pancakes. Martinis are gin drinks (sometimes vodka)with olive and brine and vermouth, shaken with ice, and poured into a martini glass with olives.
Any other kind of martini is not a martini *humbug*
About the vodka, I was being munificent. The only martini for me is Bombay Sapphire, dry, up, and dirty. Not that I have occasion to indulge these days! I dream of having a martini party some day.

Date: 2008-03-02 02:32 pm (UTC)In fact, I think it'd be great in a Dirty Martini.
As I've tried more bacon flavored stuff, I realize much of what I enjoy is the texture/taste combo.
