Blue Hills at Stone Barns part 2

And we continue
Onto fish: this was a lovely Alaskan salmon,which isn't pink because they eat different stuff, with peas, pistachios,tarragon,and sea salt. The fish was cooked sous vide, so was melting tender.Awesome

So, they like presenting stuff from the farm
Here are their eggs

Which is followed by

A poached egg crispy fried with peas,chervil and morels

Which was enough to cause me to lose my vocabulary and my eyes rolled up in my head
Chicken oysters with farro,barley,and pea risotto with hazelnuts

Here's where i'm starting to lose light, and unfortunately the next picture isn't great
Berkshire pork belly and loin with chickpeas,potatoe puree,herbs and jus

A cheese course, with a glass of a nice sauternes. One goat in ash and one cows milk,both locally sources,with a rhubarb gelee and rye bread

First sweet course
Carmelised strawberries with sour cream sorbet
I quibble about a dairy product being the main ingredient and being called a sorbet

No singing, but a birthday dessert
underneath is a pickled fiddlehead fern,asparagus foam,pine nut butter, rhubarb ice cream. Sweet cake for the candle holder

Chocolate flourless cake with dark rum caramel,espresso crunchy bits,and sweet cream ice cream

And at the end with the crappiest picture yet...a yoghurt meringue stick,raspberry dark ganache square and a strawberry
