Crepes are one of those things I'ld just a soon buy at a store. They're a little tedious, and frankly everyone's crepes are the same. There is no super sekret recipe for crepes. In a restaurant it's easier to do because you get 3 pans going at once on a hot top and you just keep moving. Butter pan, ladle in batter, swirl, move to next. When all three are battered the first on is ready to flip, down the line you go, than down the line you stack 'em and start again. With one pan it's a little annoying to sit there waiting for it to set up before flipping. I wish I had a grocery near me that carried them

Date: 2006-06-15 09:07 pm (UTC)This is precisely why I so love making them: I can turn out yummy delicious turn-those-nasty-leftovers-into-yummy-filling-treats crepes despite not being much of a cook. Though I find keeping up with three pans is a little much, so I tend to stick with two.
