The beef sale seems to have been succesful, and the farm owner dropped me a line asking if I was interested in getting some more as a person is MIA for 50# order for this week . If anyone is interested, it's 3.49/# for USDA inspected, blast frozen, yummy CSA beef.

I know the military found about a cow's worth of beef in deep freeze since the civil war, but did they find yet more?

Community Supported Agriculture, basically knowing a farmer and getting produce/meat/eggs from them directly. The farmers I get this from aren't certified organic 'cause it's costly, but they only use organic feed when the cows aren't eating from the front field.

They used to get the cows butchered in cuts, but some of their clients(not me) had problems with the fact that a heritage breed like banded gallways are 1/3 the size of commercial cattle, which means the cuts are, you guessed it, 1/3 average size. To end the bitching they just get the whole thing ground and mixed up. Lean stuff, but great flavor. Personally I did not mind getting strip steaks that were 6 oz, but what the hell, I actually know what's important.
