as long as you use realemon you will keep the acidity at the right level, but it gives a but of flavor, ascorbic acid gives no flavor but the right acidity. Check a canning book to check for how much to use
my freezer is filled with meat from happy animals since i've been working with goddessfarmer so there isnt alot of room for something that takes up as much space as stock. The jars fit on the shelf really well
