Don't bitch about Foie Gras

Chris Consentino of Incanto Restaurant(who has a cool blog doing fun stuff with food) writes a well thought out explanation in defense of foie gras. I happen to love the stuff.. He's been threatened by an anti foie group that has already done some very scary things to other restaurateurs. Attacking foie gras is like protesting fur...it's much easier to attack a very small group of rich people who wear fur than bikers who wear leather. Fur animals are cute while cows that we get our leather from are not. Trust me, if you saw where the majority of your meat comes from you'ld not worry about ducks eating the way nature built them.Most people don't eat foie but most everyone eats pork or chicken. That makes it easy to single out a small group to target.

A well-written, if long-winded, rant. I found the duck biology lesson and veterinary testimonials to be most compelling.

Very interesting! The production of foie gras was a subject of some discussion when I was in Paris with [livejournal.com profile] weegoddess and it would have been good to know the facts in the Village Voice article then.

Foie gras's main flaw is 1) too expensive, and 2) a lack of sauternes. *sigh*

When I was in school and the savory students would bring the pastry class things to eat, and they were doing foie gras apps, the other five or six girls in my class (all way younger, except the older vegetarian) all went "eeeeeuw." Our chef instruuctor tried to give them the lecture about educating their palates. I just said, "you don't want any? pass it over here!"

I learned that there is, in fact, an amount of foie gras beyond which the rest will be indigestible. :-/

Interesting article. Thanks for posting. You would think that most people going to the effort to protest something would take a little time to learn about it first, but no.
