Intriguing

Canning tuna at home

using really good olive oil and some garlic? Could be amazing,and I already have a pressure canner

Could be VERY amazing.

I think it would be a fun challenge for an experienced canner (read "food geek") such as yourself.

Hell, if I had a pressure canner I would be willing to try it myself.

I just read that issue of Saveur and thought of you when I read that particular article. that and the yummy canned salmon my Gram used to make!

I highly suggest going for it.... :-P
