Razor Clams in Vinegar Sauce
This was tasty but not one of my favorites,very fresh raw razor clams with a foamy vinegar sauce and a creamy sauce underneath.Nice,but not mindblowing

The Sea
This was the only one that actually failed for me.It's a tasting of different seaweeds that you eat from the outside in, ending with a chunk of watermelon with a sea brine foam.Sorry,it's just a bunch of seaweed.They tasted fine,but if you weren't a huge seaweed fan this dish was not going to change your mind.They did look cool

Crab-Marrekech
This was nice, chunks of spider crab in a mild broth with cous cous and citrus,served warm.Very juicy and flavorful without any one thing standing out and overwhelming you.

Pita of Iberian Ham Fat and Veal Bone Marrow
This one rocked my world.It was an incredibly thin pita,filled with chunks of warm(not hot)ham fat and veal marrow.These candied cranberries were served along side to cut the richness.OHMIGOD this was amazing,juicy and rich without being greasy in the least,the definition of unctuousness.

Lamb Brains in Their own Juice
Thiswas the only dish we got advanced notice on.At the beginning they asked if we wanted the menu in advance or just be surprised(we chose surprised) but were we OK with the lamb brains,and we were.The bowl was placed in front of you,thena waiter poured an incredibly concentrated lamb jus over it.The balls were encapsulated lamb brains,with some walnuts,raisin like globs,a couple of spots of mustard.Tasted deeply lamb and brainy too.Hard to explain if you've never had brains.This was very well done, I liked it.

The cheese course,sort of.The cotton candy was sort of dense,almost milky,and underneath was a cheese cream,fairly strong,but really luscious,and a fruit paste on the side.

"Piquillo" Peppers and Banana Tatin
Interesting execution but I'm not sure how successful it really was.The base was crispy,flaky and sweet,and what you can't see is that the red pepper is soft and jackets a slightly cooked banana filling.It was eaten with this yoghurt sauce with tarragon.It tasted good,and was certainly interesting in construction,but not a favorite.

Moon
This made me laugh, it's a moonscape, with a moonboot print in it.The moon was made of a dense chocolate cream,with cocoa nibs and cocoa meringue "moon rocks".Underneath it was an intense passionfruit jam.This was so cute,and yummy.

Morphings
These are the last offerings,little nibbles.Passionfruit puffs kinda like the lightest meringues you've ever had,very intensely flavored yet light.
At this point I was getting overwhelmed,so I can't remember what this was,but I'm sure it was sweet and light 'cause all these things at the end were.This was a sweet,tender sugar cookie with a mango paste on it,very nice.

The Morphings were the end,served with a dessert wine.At this point I was in complete sensory overload and very glad we were at the end.

The whole ride took 5 1/2 hours.
