The Middle School students, (The Big Kids), told Alyssa that I was cool. I taught a class on knife safety and skills to them, they're about 12-14 years old in age. I talked about food and we can learn about people and cultures thru the food they eat, why they should learn basic cooking skills, loads of other stuff. I've been asked to teach a weekly class on tuesdays, in conjunction with their project this year of making lunch for the teachers every wed. I always wanted to teach a course in basic cooking skills to teenagers, stuff that doesn't get taught to them anymore because home ec is a thing of the past, cut first for political correctness, then for budget reasons, and most kids today have both parents working so it's tougher to learn from harried parents who just want to get dinner on the table. I envisioned teaching basic setup and cooking, 10 things to do with ground beef, white sauce as the basis for anything from cream of broccoli soup to mac-n-cheese, how to roast a chicken and 5 things to do with leftover roast chicken. Maybe if this works out this year I can see about teaching a course like this thru continuing ed at the Roudenbush center.
