cook up all the tomatoes, send them thru a food mill, reduce until thickened and then can in HW bath with ascorbic acid

Would it taste weird to use a bit of lemon juice instead of straight ascorbic acid?

as long as you use realemon you will keep the acidity at the right level, but it gives a but of flavor, ascorbic acid gives no flavor but the right acidity. Check a canning book to check for how much to use

Is canning chicken stock better than merely freezing it? (I'm guessing that you'd say YES but I don't know why)

my freezer is filled with meat from happy animals since i've been working with [livejournal.com profile] goddessfarmer so there isnt alot of room for something that takes up as much space as stock. The jars fit on the shelf really well
